Crispy Corn Fritters

Fritters are really fun to make and to eat. They can be as plain or as interesting as you want. The idea is to make them really creamy on the inside and crispy on the outside.

Ingredients

  • 1 large egg
  • ⅓ cup whole milk
  • ⅔ cup cornstarch
  • 1½ tsp. wheat-free baking powder
  • ½ tsp. salt
  • 1 tsp. ground black pepper
  • ⅛ tsp. ground nutmeg
  • 1 cup corn kernels
  • 2 cups canola oil

Directions

  • Place egg, milk, cornstarch, baking powder, salt, pepper, and nutmeg in a food processor and blend until smooth. Scrape into a bowl; fold in the corn.
  • Heat oil to 350°F in a large frying pan. Drop the fritters by the tablespoonful into the hot oil and cook for 3–5 minutes. Drain on paper towels and serve hot.
