Currant and Port Sauce for Pork or Game

A little goes a long way, so it’s best to serve it in a sauce boat on the side so people can take as much or as little as they please. For variations, you can add 1 tablespoon fresh orange juice, 1 teaspoon lemon juice, or 1/4 cup heavy cream.

  • ½ cup currant jelly
  • ½ cup port wine
  • ¼ cup water
  • 2 tsp. cornstarch
  • ⅛ tsp. ground cloves
  • ⅛ tsp. whole allspice
  • ½ tsp. salt


  • Heat the jelly and port in a saucepan. Mix the water and cornstarch together and whisk it into the jelly/port mixture. Boil for 5 minutes.
  • Add the rest of the ingredients and serve.
