Ingredients

  • Fresh juice from 1 lb. carrots
  • 2 cups chicken broth
  • 2 Tbsp. grated ginger
  • 2 tsp. curry powder
  • 1 cup low-fat plain yogurt
  • ¼ cup fresh orange juice

Directions

  • Combine the ingredients in a blender and process until smooth.
  • Chill at least 1 hour before serving.
