Curried Cauliflower

Cauliflower is mild and nutty and adapts well to almost any spice or herb. Roasted with curry, it becomes tender and spicy.

Ingredients

  • 1 cauliflower, cut into florets
  • 1 Tbsp. olive oil
  • 1 Tbsp. butter
  • 1 tsp. curry powder
  • ¼ tsp. salt
  • ⅛ tsp. white pepper
  • 1 Tbsp. apple cider vinegar

Directions

  • Preheat oven to 400°F. In a small saucepan combine, olive oil, butter, curry powder, salt, pepper and vinegar; heat over low heat until butter melts.
  • Place cauliflower on a baking sheet and drizzle with the butter mixture. Toss to coat. Roast for 25 to 35 minutes or until cauliflower is tender when pierced with a knife. Serve immediately.
