Cauliflower is mild and nutty and adapts well to almost any spice or herb. Roasted with curry, it becomes tender and spicy.

- 1 cauliflower, cut into florets
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 1 tsp. curry powder
- ¼ tsp. salt
- ⅛ tsp. white pepper
- 1 Tbsp. apple cider vinegar
- Preheat oven to 400°F. In a small saucepan combine, olive oil, butter, curry powder, salt, pepper and vinegar; heat over low heat until butter melts.
- Place cauliflower on a baking sheet and drizzle with the butter mixture. Toss to coat. Roast for 25 to 35 minutes or until cauliflower is tender when pierced with a knife. Serve immediately.
