Curried Cauliflower Soup

Orange cauliflower is an excellent variety to use in this recipe. It has 25 percent more vitamin A than white cauliflower and lends an attractive color to the soup.

  • 1 lb. cauliflower florets
  • 2½ cups water
  • 1 medium onion, minced
  • 2 cloves garlic, minced
  • 3 tsp. curry powder
  • ¼ tsp. cumin


  • Place all the ingredients in a 4-quart slow cooker. Stir. Cook on low for 8 hours.
  • Using an immersion blender or standard blender (in batches), blend until smooth.
