Curried Cauliflower Soup
Orange cauliflower is an excellent variety to use in this recipe. It has 25 percent more vitamin A than white cauliflower and lends an attractive color to the soup.

- 1 lb. cauliflower florets
- 2½ cups water
- 1 medium onion, minced
- 2 cloves garlic, minced
- 3 tsp. curry powder
- ¼ tsp. cumin
- Place all the ingredients in a 4-quart slow cooker. Stir. Cook on low for 8 hours.
- Using an immersion blender or standard blender (in batches), blend until smooth.
