Curried Chicken Soup

If you transfer the egg back and forth between your cracked shells, the yolk with separate itself out.

  • 1 Tbsp. butter
  • 1 tsp. curry powder
  • 3⁄4 Tbsp. all-purpose flour
  • 1 1⁄2 cups chicken broth
  • 1⁄4 tsp. paprika
  • 1 egg yolk
  • 1⁄4 cup whole milk
  • 1⁄4 cup diced cooked chicken
  • 1 Tbsp. sliced scallions


  • Melt the butter in a saucepan. Add the curry and the flour and stir, cooking for 1 to 2 minutes. Pour in the broth and bring to a boil. Add paprika. Turn the heat down to low.
  • In a small bowl, beat together the egg yolk and the milk. Gradually whisk this into the broth mixture. Stir in the chicken and heat on low for 5 minutes. Garnish with scallions and serve.
