Curried Egg Salad

A dash of curry powder turns ordinary egg salad into a flavorful entrée. Serve this egg salad on its own or on hearty bread with honey mustard, chopped cashews, and green lettuce.

  • 3 large hard-cooked eggs
  • 2 Tbsp. diced celery
  • 1 Tbsp. chopped scallions
  • ¼ cup mayonnaise
  • 1 Tbsp. plain low-fat yogurt
  • 2 Tbsp. Dijon mustard
  • 2 tsp. honey
  • ¼ tsp. curry powder
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • ½ tsp. paprika


  • Peel and chop the eggs and put in a bowl with celery and scallions. Toss to mix briefly.
  • Add mayonnaise, yogurt, mustard, honey, and curry powder to the bowl and mix well. Season with salt, pepper and paprika.
