Curried Pineapple Ham

Ingredients

  • 2 Tbsp. vegetable oil
  • 1 medium onion, peeled and sliced
  • 3 cloves garlic, minced
  • 1 Tbsp. curry powder
  • ¼ cup coconut milk
  • 3 cups chicken broth
  • 4 cups chopped ham
  • 1 can (15 oz.) pineapple chunks, drained
  • 4 cups baby spinach
  • ½ tsp. salt
  • ⅛ tsp. pepper

Directions

  • In large saucepan over medium heat, heat oil. Add onion and cook, stirring often, for 5 minutes, or until translucent. Add curry powder and garlic, cook and stir for another minute, or until fragrant.
  • Stir in coconut milk, chicken broth, ham, and pineapple; bring to a simmer. Simmer for 15 minutes. Add spinach, season with salt and pepper, stir and simmer for 5 more minutes before serving.
