Curried Pineapple Ham
Serve this fragrant dish with rice.

- 2 Tbsp. vegetable oil
- 1 medium onion, peeled and sliced
- 3 cloves garlic, minced
- 1 Tbsp. curry powder
- ¼ cup coconut milk
- 3 cups chicken broth
- 4 cups chopped ham
- 1 can (15 oz.) pineapple chunks, drained
- 4 cups baby spinach
- ½ tsp. salt
- ⅛ tsp. pepper
- In large saucepan over medium heat, heat oil. Add onion and cook, stirring often, for 5 minutes, or until translucent. Add curry powder and garlic, cook and stir for another minute, or until fragrant.
- Stir in coconut milk, chicken broth, ham, and pineapple; bring to a simmer. Simmer for 15 minutes. Add spinach, season with salt and pepper, stir and simmer for 5 more minutes before serving.
