- 4 large eggs, lightly beaten
- 1⁄2 cup sugar
- 1⁄4 tsp. salt
- 1⁄2 tsp. vanilla extract
- 1⁄8 tsp. almond extract
- 1⁄2 cup milk, scalded
- 1 unbaked pastry shell (9 inches)
- Preheat oven to 400°F.
- In a bowl, beat together the eggs, sugar, salt, and vanilla and almond extracts. Gradually add the hot milk, stirring constantly. Pour into the pie shell.
- Bake for 25 to 30 minutes, or until a knife inserted halfway between the edge and the center of the custard comes out clean. Let cool on a rack for 30 minutes, then chill 2 hours before serving.
