Customizable Quesadillas
Quesadillas are perfect for transforming leftovers—from vegetables and proteins to toppings like salsa, sour cream and guacamole.

Ingredients
- Olive oil
- 2 large flour tortillas, divided
- 1⁄3 cup shredded cheese (cheddar, Monterey Jack or your favorite blend), divided
- 1⁄2 cup cooked protein (chicken, steak, black beans or tofu), divided
- ½ –1 cup cooked vegetables (onions, bell peppers, sweet potatoes or spinach, divided
- Optional toppings: salsa, sour cream, guacamole
Directions
- Heat large skillet over medium heat and lightly oil surface. Lay 1 tortilla in skillet and sprinkle half cheese overtop. Scatter ¼ cup protein and ¼–½ cup vegetables evenly over half.
- Fold tortilla in half, pressing gently with spatula. Cook 2–3 minutes per side, until tortilla is golden and crispy.
- Repeat steps 1 and 2 with remaining tortilla, cheese, protein and vegetables.
- Slice into wedges and serve warm with optional toppings. Refrigerate any leftovers.
