Dainty Dill and Cucumber Dip
This cool, refreshing dip is great on a hot summer day and a superb way to use fresh cucumbers from your garden.

- 1 cup plain nonfat yogurt
- 2 large seedless cucumbers, peeled and finely grated
- 1 Tbsp. dill
- 1 tsp. lemon juice
- 1 tsp. virgin olive oil
- ½ tsp. salt
- ¼ tsp. black pepper
- Mix all ingredients together and refrigerate for several hours.
