Dark Chocolate Coating

- 10 oz. semisweet chocolate, finely chopped
- ¼ cup heavy cream, at room temperature
- 12 Tbsp. butter, softened
- 1 Tbsp. light corn syrup
- Melt the chocolate, cream, butter, and corn syrup in the top of a double boiler over hot, not simmering, water, stirring constantly. Set aside to cool to room temperature before using.
