Dark Chocolate Ganache
Use your favorite brand of chocolate candy bar to make this sauce. If desired, a small amount of liqueur can be added to the melted chocolate mixture.

- 1 cup heavy cream
- 1 Tbsp. butter
- 2 1⁄3 cups finely chopped dark chocolate
- Combine cream and butter in a heavy saucepan. Place chopped chocolate in a dry, heatproof bowl. Bring cream and butter to a boil, then immediately pour over the chocolate. Let stand for 3 to 5 minutes.
- Whisk melted chocolate and cream until smooth. Use as directed in recipes.
