Ingredients

  • 2 lbs. pork shoulder
  • 1 tsp. ground black pepper
  • 1 tsp. dried parsley
  • 1 tsp. dried rosemary
  • 1 tsp. dried oregano
  • 1 tsp. garlic powder
  • ¾ tsp. crushed anise seeds
  • ⅛ tsp. red pepper flakes
  • ½ tsp. paprika
  • ½ tsp. instant minced onion flakes
  • 1 tsp. kosher salt

Directions

  • Remove all fat from meat; cut the meat into cubes. Put in food processor; grind to desired consistency.
  • Add remaining Ingredients to the meat in the food processor; mix until well blended. You can put sausage mixture in casings, but it works equally well broiled or grilled as patties.
