Double-Calcium Cottage Cheese Pancakes
Cottage cheese adds extra calcium and protein to everyday pancakes.

- 1 cup low-fat cottage cheese
- 3 large eggs
- 2 Tbsp. butter
- ¼ cup all-purpose flour
- 1 tsp. vanilla extract
- ¼ tsp. salt
- Drain liquid from cottage cheese by placing it in a strainer for 1 hour.
- Place drained cottage cheese, eggs, butter, flour, vanilla, and salt in a mixing bowl. Beat until well blended. Cover and let stand for 30 minutes.
- Spray a large skillet with nonstick cooking spray. Cook pancakes on medium-low heat, turning once until golden brown. Serve hot.
