Double Layer Mexican Pizza

Ingredients
- 8 taco sized flour tortillas
- 3 tbsp. canola oil
- 1 pound ground beef
- 1 packet (1-1.25 oz) taco seasoning
- 1⁄2 cup water
- 1 can (16 oz.) refried beans
- 1⁄2 cup enchilada sauce
- 2 cups Mexican style shredded cheese
- 1⁄4 cup sour cream
- 1 roma tomato, seeded and chopped
- 2 green onions, chopped
Directions
- Heat oven to 400°F. Line two baking sheets with parchment paper; set aside.
- Brush both sides of the tortillas with oil.
- Heat a large skillet over medium heat. Cook tortillas for 2-3 minutes, flipping as needed, until golden brown and crisp on both sides. Set aside.
- In the same skillet, brown the ground beef until no pink remains. Add taco seasoning and water. Cook an additional 2-3 minutes or until sauce has reduced and thickened.
- To assemble the pizzas, place 4 tortillas on prepared baking sheets. Top each with ½ cup refried beans and ¼ of the seasoned beef. Cover each with a second tortilla. Spread with about 2 tablespoons enchilada sauce and ½ cup cheese.
- Bake for 8-10 minutes or until cheese is melted and pizza is heated through.
- Serve pizzas topped with sour cream, tomato and green onions.
- Refrigerate leftovers.
