Double Layer Mexican Pizza

Skip the drive thru and make your own Mexican pizzas at home.

Ingredients

  • 8 taco sized flour tortillas
  • 3 tbsp. canola oil
  • 1 pound ground beef
  • 1 packet (1-1.25 oz) taco seasoning
  • 1⁄2 cup water
  • 1 can (16 oz.) refried beans
  • 1⁄2 cup enchilada sauce
  • 2 cups Mexican style shredded cheese
  • 1⁄4 cup sour cream
  • 1 roma tomato, seeded and chopped
  • 2 green onions, chopped

Directions

  • Heat oven to 400°F. Line two baking sheets with parchment paper; set aside.
  • Brush both sides of the tortillas with oil.
  • Heat a large skillet over medium heat. Cook tortillas for 2-3 minutes, flipping as needed, until golden brown and crisp on both sides. Set aside.
  • In the same skillet, brown the ground beef until no pink remains. Add taco seasoning and water. Cook an additional 2-3 minutes or until sauce has reduced and thickened.
  • To assemble the pizzas, place 4 tortillas on prepared baking sheets. Top each with ½ cup refried beans and ¼ of the seasoned beef. Cover each with a second tortilla. Spread with about 2 tablespoons enchilada sauce and ½ cup cheese.
  • Bake for 8-10 minutes or until cheese is melted and pizza is heated through.
  • Serve pizzas topped with sour cream, tomato and green onions.
  • Refrigerate leftovers.
