Easy Almond Cookies
Almond lovers, this is the cookie for you. The addition of whole almonds on the top of the cookie give it a much needed crunch, making it the perfect afternoon snack or after-dinner treat.

Ingredients
- 1⁄2 cup butter
- 1⁄2 cup superfine sugar
- 1⁄2 tsp. salt
- 1⁄4 tsp. almond extract
- 1 egg yolk
- 1 cup all-purpose flour
- 24 whole almonds
Directions
- In a large bowl, cream together the butter, sugar, salt, and almond flavoring until light and fluffy. Thoroughly beat in the egg yolk. Stir in the flour. Cover and chill for 1 hour before shaping.
- Preheat oven to 350°F. Line 2 large baking sheets with parchment paper.
- Using a level tablespoon for each, shape the dough into small balls and place them 1 inch apart on prepared baking sheets. Press an almond onto the center of each cookie. The sides will crack slightly.
- Bake for 15 minutes or until the bottoms of the cookies are browned but the tops are still light. The edges will turn tan. Carefully remove to a rack to cool.
