Easy Cinnamon Rice Pudding
Most rice eating cultures around the world have a version of rice pudding. The rice is usually slowly-cooked with milk, sugar, and spices. For this quick version, we combine cooked rice, raisins, cinnamon, and sugar with orange juice and yogurt.

- 1 1⁄2 tsp. ground cinnamon
- 2 Tbsp. granulated sugar
- 6 Tbsp. orange juice
- 1 1⁄2 cups plain yogurt
- 3⁄4 cup golden raisins
- 2 cups cooked rice
- In a small bowl, combine the cinnamon and sugar.
- In a large bowl, stir the orange juice into the yogurt. Add the cinnamon-sugar mixture and raisins.
- Stir in the cooked rice. Refrigerate 1 hour before serving
