Easy Cinnamon Rice Pudding

Most rice eating cultures around the world have a version of rice pudding. The rice is usually slowly-cooked with milk, sugar, and spices. For this quick version, we combine cooked rice, raisins, cinnamon, and sugar with orange juice and yogurt.

Ingredients

  • 1½ tsp. ground cinnamon
  • 2 Tbsp. granulated sugar
  • 6 Tbsp. orange juice
  • 1½ cups plain yogurt
  • ¾ cup golden raisins
  • 2 cups cooked rice

Directions

  • In a small bowl, combine the cinnamon and sugar.
  • In a large bowl, stir the orange juice into the yogurt. Add the cinnamon-sugar mixture and raisins.
  • Stir in the cooked rice. Refrigerate 1 hour before serving
