Easy Oven Beef Burgundy

Ingredients
- 4 oz. bacon, sliced
- 1 lb. beef round, cubed
- 2 Tbsp. all-purpose flour
- 1 cup sliced carrots
- 1 cup chopped onions
- 1 cup sliced celery
- 1 clove garlic, finely chopped
- 1⁄4 tsp. pepper
- 1⁄4 tsp. marjoram
- 1⁄4 tsp. thyme
- 1⁄2 tsp. salt
- 2 Tbsp. balsamic vinegar
- 1⁄2 cup dry red wine
- 1⁄2 cup water
- 1 cup sliced fresh mushrooms
Directions
- Preheat oven to 325°F.
- Heat a 3-quart, covered baking dish or Dutch oven over medium-high heat. Add the bacon and cook until the fat has rendered out. Remove bacon with a slotted spoon.
- Dredge meat cubes in flour; add to the pot. Cook until the meat and flour is dark brown. Add carrots, onions, celery, garlic, pepper, marjoram, thyme, salt, and vinegar. Stir to combine.
- Pour red wine and water over mixture. Cover and bake for 1 hour.
- Remove from oven and mix in mushrooms.
- Return to oven for 1 hour, or until beef cubes are tender.
