Easy Protein Cookies
Tofu is a great source of protein, and this is an easy way to sneak a little into the kids’ diet. These cookies are so easy to make that they’ll quickly become a go-to favorite.

- 1 box (18.25 oz.) white cake mix
- 1⁄2 cup silken tofu
- 1⁄4 cup olive oil
- 1 large egg
- Preheat oven to 350°F.
- Mix all ingredients well in a large mixing bowl. Drop by spoonfuls onto a nonstick cookie sheet. Bake for 20 minutes.
- Allow to cool and remove to wire rack.
