Easy Scottish Shortbread

  • 4 cups all-purpose flour
  • 2 cups butter, softened
  • 1⁄2 cup confectioners’ sugar
  • 1 tsp. baking powder
  • 1⁄2 tsp. salt


  • Preheat oven to 325°F.
  • In a large bowl, combine all the ingredients, blending and kneading by hand until well mixed and a soft dough forms. Divide the dough in half. Lightly press each half into the bottom of 2 round cake pans or deep-dish pie plates (9 inches). Prick the dough with a fork.
  • Bake for 45 minutes, or until golden brown. Cut each shortbread into 12 wedges; let cool completely in the pan on a rack. Remove from the pans and store in a tightly covered container.
