Egg-cellent Sandwich

If you are looking to keep your cholesterol low, substitute two egg whites for the whole egg.

  • 1 tsp. olive oil
  • 1 tsp. minced garlic
  • ¼ cup spinach leaves
  • 1 poached egg
  • 1 high-fiber English muffin, toasted
  • 2 Tbsp. ricotta cheese
  • 2 tomato slices


  • Heat oil in a small skillet over medium-high heat. Add garlic and sauté 30 seconds. Add spinach and cook 1 minute or until wilted. Set aside.
  • Spread on half of English muffin with ricotta. Top with tomatoes, spinach mixture, and egg. Serve immediately.
