- 1 tsp. olive oil
- 1 tsp. minced garlic
- ¼ cup spinach leaves
- 1 poached egg
- 1 high-fiber English muffin, toasted
- 2 Tbsp. ricotta cheese
- 2 tomato slices
- Heat oil in a small skillet over medium-high heat. Add garlic and sauté 30 seconds. Add spinach and cook 1 minute or until wilted. Set aside.
- Spread on half of English muffin with ricotta. Top with tomatoes, spinach mixture, and egg. Serve immediately.
