Fat-Free Roasted Garlic

- 2 garlic heads
- Preheat oven to 350°.
- Lightly spray a small baking dish with nonstick spray. Slice off ½ ” from the top of each garlic head and rub off any loose skins, being careful not to separate the cloves. Place the garlic in baking dish, cut-side up. Cover and bake until the garlic cloves are very tender when pierced, about 30 to 45 minutes.
- To serve, squeeze cloves from their skins directly onto bread and use a knife to spread.
