Fennel Cabbage (Lahano) Salad

My favorite! The thinly sliced cabbage makes a fabulous salad. The secret is smoked paprika and lots of fresh lemon juice.

Ingredients

  • 1⁄2 cabbage, thinly sliced
  • 1 cup fennel, trimmed and thinly sliced
  • 1⁄4 cup olive oil
  • 1 teaspoon smoked paprika
  • 1⁄2 lemon, juiced
  • 1⁄4 cup almonds, toasted and coarsely chopped
  • 1⁄4 cup Parmesan or mozzarella, shredded
  • 1⁄2 teaspoon vinegar
  • salt and freshly ground black pepper, to taste

Directions

  • Slice cabbage thin and place in a large bowl.
  • Toast almonds and shred Kefalotiri and add to bowl with cabbage and fennel.
  • In a separate bowl, mix olive oil, lemon juice, salt, pepper, smoked paprika and vinegar.
  • Toss with salad dressing and serve immediately.
