Fennel Cabbage (Lahano) Salad
My favorite! The thinly sliced cabbage makes a fabulous salad. The secret is smoked paprika and lots of fresh lemon juice.
Ingredients
- 1⁄2 cabbage, thinly sliced
- 1 cup fennel, trimmed and thinly sliced
- 1⁄4 cup olive oil
- 1 teaspoon smoked paprika
- 1⁄2 lemon, juiced
- 1⁄4 cup almonds, toasted and coarsely chopped
- 1⁄4 cup Parmesan or mozzarella, shredded
- 1⁄2 teaspoon vinegar
- salt and freshly ground black pepper, to taste
Directions
- Slice cabbage thin and place in a large bowl.
- Toast almonds and shred Kefalotiri and add to bowl with cabbage and fennel.
- In a separate bowl, mix olive oil, lemon juice, salt, pepper, smoked paprika and vinegar.
- Toss with salad dressing and serve immediately.
