- 4 medium tomatoes, chopped
- 2 small jalapeño peppers, seeded and minced
- 1 small red onion, peeled and chopped
- 1 Tbsp. honey
- 1 Tbsp. sherry vinegar
- 2 tsp. olive oil
- ½ tsp. salt
- ¼ tsp. ground cayenne pepper
- 2 Tbsp. chopped fresh cilantro
- ¼ tsp. oregano
- Mix together all the ingredients in a bowl and refrigerate.
