Finnish Oven-Baked Pancake (Pannakakku)

Try making pancakes the way the Finns do: baked in the oven. Make them sweet or savory by adding ingredients to the batter. For a savory pancake, you could add diced ham, shredded chicken, or blanched vegetables, just leave out the sugar. For sweet pancakes try adding fruit, lemon zest, or vanilla to the batter or serve it with jam, fresh berries, or fruit compote with whipped cream on the side.

  • 6 eggs
  • 1 1⁄2 cups milk
  • 1 1⁄2 cups flour
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 3 Tbsp. melted butter


  • Whisk together the eggs, milk, flour, sugar, and salt. Allow to rest at room temperature for 30 minutes.
  • Meanwhile, put the butter in a large oven-proof baking dish and place in a cold oven. Set the oven to 450°F. Once it has reached the right temperature, remove the dish and swirl gently so that the melted butter covers all surfaces.
  • Pour batter in the prepared baking dish and return it to the oven. Cook 15 to 20 minutes, or until pancake is puffed and golden.
