Flourless Vegan Banana Peanut Butter Pancakes

- 2 Tbsp. flaxseed meal
- 3 Tbsp. water
- 1⁄2 ripe medium banana
- 1 tsp. chia seeds
- 1 Tbsp. peanut butter
- 1 Tbsp. coconut oil
- Make flax eggs by combining flaxseed meal and water in a small bowl and allow to sit 5 minutes.
- In a glass measuring cup, mix together flax eggs, banana, chia seeds, and peanut butter. Be sure to mash bananas well or use a blender to mix ingredients until smooth on low speed.
- Heat oil in a medium skillet over medium heat. Pour a couple of batches of batter onto the skillet and cook pancakes until bubbly on top and golden on bottom, about 4 minutes. Flip and cook about 2 more minutes.
