Fluffy Mashed Potatoes

- 4 medium potatoes, peeled
- ½ cup milk
- 2 Tbsp. butter
- ¼ tsp. salt
- ⅛ tsp. ground black pepper
- Boil the potatoes in water to cover until they’re tender. Turn off the burner and drain the potatoes, then return the potatoes in the pan to the burner. Shake the pan for about 1 minute to allow the potatoes to dry.
- Warm the milk and butter in a small saucepan or in a glass measuring cup in the microwave, to prevent it from cooling the potatoes. Add salt and pepper to the hot potatoes and mash them slightly with a hand masher or large fork. Then add the milk gradually while beating with an electric mixer at medium-low speed. Beat until fluffy.
