Fondant Au Chocolat (Almost Flourless Chocolate Cake)

This is an almost flourless chocolate cake that is as tasty as it is easy to bake.

- ⅔ cup salted butter
- 7 oz. dark chocolate, 60% cocoa minimum
- 3 large eggs
- ¾ cup sugar
- ½ cup all-purpose flour
- Preheat the oven to 350°F. In a small saucepan over low heat, slowly melt the butter with the chocolate (you can even make it in a bain-marie by putting a larger saucepan of water under the small saucepan). Using a wooden spoon, stir until smooth, then remove from heat and let it cool.
- In a medium bowl, whisk the eggs, then pour them in a larger bowl. Add the sugar, whisk continuously, then add the melted chocolate and butter. Add the flour slowly, and whisk until smooth. Butter a 9" round springform pan. Pour the mixture in it. Bake for 25 minutes.
- Cool on a wire rack.
