This is a basic, mild salsa. Most of the heat is in the seeds of the jalapeño, so if you want an even milder salsa, discard the seeds. This is a good recipe to serve with burritos and tacos for a Mexican theme.

- 4 cups tomatoes, diced
- ½ cup red onion, diced
- 2 fresh jalapeño peppers, sliced
- 2 tsp. kosher salt
- Stir all the ingredients together in a bowl. Chill the salsa in the refrigerator for 1 hour to let the flavors marinate.
