Fraises au Vin (Strawberries in Wine)

This strawberries in wine cold soup was very common in rural France before WWII. Very refreshing!

- 2 cups red wine
- 1 vanilla pod
- 2 cloves
- 2 star anise pods
- 1 tsp. ground ginger
- ¼ cup sugar
- 1 lb. strawberries, hulled and halved
- Juice of 1 lemon
- In a medium saucepan, bring the wine to a boil over medium-high heat. Slice the top outer layer of the vanilla pod and add it to the wine with the cloves, star anises, and ginger. Add the sugar and stir with a wooden spoon. As soon as it begins to boil, reduce to low and simmer for 15 minutes. Pour in a large serving bowl and let it cool down to room temperature.
- Take the vanilla pod out, scratch the seeds out with a teaspoon and put them back in the wine. Over a large bowl, cut the strawberries in half and sprinkle the lemon juice on them. Add them to the wine when it’s cold. Put in the refrigerator for 3 hours.
- Serve cold in wine glasses.
