Freezer Peach Jam
This is an easy and tasty peach jam made for the freezer.

Ingredients
- 4 cups peeled and crushed fresh peaches
- 1⁄4 cup lemon juice
- 1 package (1.75 oz.) powdered fruit pectin
- 1 cup light corn syrup
- 5 1⁄2 cups sugar
Directions
- Add peaches to a large kettle; with a wooden spoon, stir in lemon juice. Stir in pectin. Let mixture stand for 20 minutes.
- Add corn syrup and stir to blend; add sugar and blend well. Cook mixture over low heat to about 100°F. It should be warm to the touch. Do not allow mixture to get very hot. Pour jam into jars, leaving 1⁄2-inch headspace. Cover immediately and let stand until the consistency is that of jelly. Freezer jams can be stored for up to 1 year in the freezer, and they will keep for several weeks in the refrigerator.
