Freezer Yeast Biscuits

Bake these biscuits straight from the freezer! Serve them with butter and maple syrup hot out of the oven.

  • 1 package dry yeast
  • 5 Tbsp. water
  • 1 tsp. sugar
  • 4 cups all-purpose flour
  • 1 cup whole wheat flour
  • 3 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1⁄4 tsp. salt
  • 1 cup butter, softened
  • 1⁄3 cups buttermilk
  • 1⁄4 cup melted butter


  • In small bowl, combine yeast, water, and 1 teaspoon sugar; let stand for 5 minutes until bubbly. In large bowl, combine flours, sugar, baking powder, baking soda, and salt and mix well. Using two knives or a pastry blender, cut in butter until particles are fine. Add yeast mixture and buttermilk and stir just until a dough forms.
  • Form dough into 3-inch balls, place on work surface, and flatten to 1-inch thickness with your palm. Dip in melted butter and flash freeze. When frozen solid, place biscuits in zipper-lock bag, label, seal, and freeze.
  • To bake: Preheat oven to 400°F. Bake biscuits for 20 to 25 minutes. Remove from cookie sheets and cool briefly on wire rack. Serve warm.
