Freezer Yeast Biscuits

Bake these biscuits straight from the freezer! Serve them with butter and maple syrup hot out of the oven.

  • 1 package dry yeast
  • 5 Tbsp. water
  • 1 tsp. sugar
  • 4 cups all-purpose flour
  • 1 cup whole wheat flour
  • 3 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 cup butter, softened
  • ⅓ cups buttermilk
  • ¼ cup melted butter


  • In small bowl, combine yeast, water, and 1 teaspoon sugar; let stand for 5 minutes until bubbly. In large bowl, combine flours, sugar, baking powder, baking soda, and salt and mix well. Using two knives or a pastry blender, cut in butter until particles are fine. Add yeast mixture and buttermilk and stir just until a dough forms.
  • Form dough into 3" balls, place on work surface, and flatten to 1" thickness with your palm. Dip in melted butter and flash freeze. When frozen solid, place biscuits in zipper-lock bag, label, seal, and freeze.
  • To bake: Preheat oven to 400°F. Bake biscuits for 20 to 25 minutes. Remove from cookie sheets and cool briefly on wire rack. Serve warm.
