Fresh Cantaloupe and Raspberry Soup
Garnish each serving with a mint leaf and a whole raspberry.

- 1 ripe cantaloupe
- 1 cup fresh raspberries, plus 4 raspberries for garnish
- 1⁄2 cup orange juice
- Juice of 1⁄2 a lemon
- Juice of 1⁄2 a lime
- 4 fresh mint leaves
- Cut the cantaloupe in half, clean out the seeds, peel the halves, and cut the flesh into 1-inch pieces. Put the cantaloupe in a blender to create a smooth purée. Pour into a large bowl. Blend the raspberries into a smooth purée. Pour this into a strainer and push the juice and pulp through the strainer into a small bowl in order to remove the seeds. This should yield about 1⁄2 cup.
- Stir the purées together, then add the juices and stir to blend. Chill 1 hour, then serve in small glasses or bowls, garnished with raspberries and mint.
