Fresh Coconut Milk
Coconut milk is easy to make—just blend and strain.

Ingredients
- 3 mature coconuts
- 3 cups coconut water
Directions
- Open coconuts; drain water. Cut meat into 1-inch chunks.
- In a heavy-duty blender, combine water and coconut meat. Blend on high speed until meat is puréed, adding additional water if needed.
- Strain mixture through linen or a fine sieve. Chill, and serve or use in recipes that call for coconut milk.
