Fresh Fruit and Meringue

This recipe also works well with soft fruits, such as blackberries, blueberries, and raspberries. Itʼs a perfect ending to a picnic or a sweet, light finish to any summer lunch.

Ingredients

  • 6 egg whites
  • ½ cup granulated sugar
  • ¼ tsp. cream of tartar
  • 2 cups cottage cheese
  • 2 cups chopped fresh fruit such as strawberries, mango, and kiwi
  • 3 Tbsp. honey

Directions

  • Preheat oven to 200°F. Line a baking sheet with parchment paper or spray with cooking spray.
  • In a copper or stainless steel bowl, beat the egg whites, sugar, and cream of tartar until stiff. Swirl into small clouds on prepared baking sheet. Bake in oven for 5 to 6 hours, until dry, crispy, and lightly golden.
  • Once cooled, dollop with cottage cheese and top with fresh seasonal fruit. Drizzle with honey.
