Fresh Herb and Lemon Couscous
Couscous is the name of a North-African pasta as well as the dish made with that pasta. Basic couscous can be prepared in minutes by adding boiling water or broth and letting it sit for a few minutes until the water is absorbed. Once the couscous is cooked, stir in your favorite herbs, spices, and nuts. For this recipe, we toss it with olive oil, lemon juice, chopped parsley, basil, and mint.

- 1 cup water
- 1 cup couscous
- 1 tsp. salt
- 1 Tbsp. olive oil
- The juice of 1 lemon
- 1 Tbsp. fresh parsley, chopped
- 1 Tbsp. fresh basil, chopped
- 1 Tbsp. fresh mint
- In a medium saucepan over medium-high heat, bring water to a boil. Off heat, stir in couscous and salt, cover, and let stand for 10 minutes, until liquid is absorbed.
- Fluff couscous with fork and transfer to a serving bowl. Stir in olive oil, lemon juice, and chopped herbs.
