Fried Banana Egg Rolls
This appetizer is also great as a dessert. The rolls can be served with ice cream or served on their own sprinkled with powdered sugar.

- 1 tsp. tapioca flour
- 2 Tbsp. water
- 25 egg roll wrappers
- 5 ripe bananas, peeled and mashed into a paste
- 4 cups vegetable oil
- Mix tapioca flour with 2 tablespoons water and heat in the microwave for 30–40 seconds to make a paste.
- Lay an egg roll wrapper sheet on a counter with one of the corners pointing toward you. Place 2 tablespoons of mashed bananas on the corner closest to you. Roll filling up to halfway. Fold in the two corners on the side and roll up to meet with the top corner. Glue with tapioca paste.
- Heat oil in a deep-frying pan to 350°F. Deep-fry each roll for 4 minutes. Drain on paper towels and let cool slightly before serving.
