This appetizer is served hot immediately after frying. For more texture, try adding a handful of shredded coconut into the batter.

Serves: 8

  • ¾ cup rice flour
  • ¼ cup tapioca flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • ¼ cup white sesame seeds
  • ¾–1 cup water
  • 8 medium ripe but firm bananas, peeled
  • 3 cups vegetable oil

  • Heat oil in a fry pan over medium heat to reach 350°F.
  • Mix rice flour, tapioca flour, sugar, salt, and sesame seeds in a mixing bowl. Add water slowly until mixture is thick enough to coat the bananas, about the consistency of pancake batter.
  • Cut bananas in half crosswise, then slice those pieces lengthwise into 2–3 pieces. Dip banana pieces in the batter and fry for about 5 minutes (or until golden). Turn banana pieces halfway to evenly brown the pieces.
