Fried Banana (Kluay Tod)
This appetizer is served hot immediately after frying. For more texture, try adding a handful of shredded coconut into the batter.

- ¾ cup rice flour
- ¼ cup tapioca flour
- 2 Tbsp. sugar
- 1 tsp. salt
- ¼ cup white sesame seeds
- ¾–1 cup water
- 8 medium ripe but firm bananas, peeled
- 3 cups vegetable oil
- Heat oil in a fry pan over medium heat to reach 350°F.
- Mix rice flour, tapioca flour, sugar, salt, and sesame seeds in a mixing bowl. Add water slowly until mixture is thick enough to coat the bananas, about the consistency of pancake batter.
- Cut bananas in half crosswise, then slice those pieces lengthwise into 2–3 pieces. Dip banana pieces in the batter and fry for about 5 minutes (or until golden). Turn banana pieces halfway to evenly brown the pieces.
