Fried Bananas with Orange-Lemon Sauce

Ingredients

  • 2 Tbsp. orange juice
  • 1 Tbsp. sugar
  • 3 firm bananas, peeled and cut diagonally into 3" slices
  • 1 cup sifted all-purpose flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 large egg, lightly beaten
  • ½ cup milk
  • 2 Tbsp. butter, melted
  • ½ tsp. vanilla extract
  • 1 tsp. grated orange zest
  • 2 cups vegetable oil
  • ½ cup sugar
  • 1½ Tbsp. cornstarch
  • ⅛ tsp. salt
  • ¾ cup water
  • 2 Tbsp. butter
  • ¼ cup orange juice
  • 1 Tbsp. lemon juice

Directions

  • Combine the orange juice and sugar in a shallow bowl, stir well, and place the banana pieces in the bowl.
  • Sift together the sifted flour, baking powder, and salt into a bowl. In another bowl, stir together the egg, milk, butter, vanilla, and orange zest. Add the egg mixture to the flour mixture, stirring only until moistened.
  • In a deep-fat fryer or a deep skillet, heat oil to 375°F. Meanwhile, make the sauce: In a small saucepan, combine the sugar, cornstarch, and salt. Add the water and bring to a boil over medium heat, stirring constantly. Reduce heat to low and cook, stirring, for about 10 minutes, or until thick and clear. Remove from the heat and add the butter and the orange and lemon juices. Keep warm.
  • Drain the bananas. Dip them into the batter, coating evenly, and slip into the hot oil. Do not crowd the pan. Cook for 2 to 3 minutes, or until golden brown. Transfer to paper towels to drain. Serve hot with Orange-Lemon Sauce.
