Fried Chilies with Shallots and Garlic (1 cup veg oil)

- 1 cup vegetable oil
- 3 shallots, chopped
- 2 garlic cloves, chopped
- 15 dried small Thai chilies
- ¼ tsp. salt
- ½ tsp. palm sugar
- Heat oil in a pot to about 325°F. Deep-fry shallots and garlic until golden, about 1 minute. Drain and set aside.
- Deep-fry dried chilies until fragrant, about 1 minute, and drain on paper towels.
- Combine all ingredients, including salt and palm sugar, in a small food processor with 2 tablespoons of the oil from deep-frying and blend until smooth.
