Fried Chilies with Shallots and Garlic (1 cup veg oil)

  • 1 cup vegetable oil
  • 3 shallots, chopped
  • 2 garlic cloves, chopped
  • 15 dried small Thai chilies
  • ¼ tsp. salt
  • ½ tsp. palm sugar


  • Heat oil in a pot to about 325°F. Deep-fry shallots and garlic until golden, about 1 minute. Drain and set aside.
  • Deep-fry dried chilies until fragrant, about 1 minute, and drain on paper towels.
  • Combine all ingredients, including salt and palm sugar, in a small food processor with 2 tablespoons of the oil from deep-frying and blend until smooth.
