Fried Egg (Kai Tod)
Fried eggs are great with some Thai chilies in fish sauce. A fried egg is also a perfect complement to any Thai fried rice.

- ½ cup vegetable oil
- 1 large egg
- Heat a pan or wok until hot.
- Add oil to the pan and wait 30 seconds.
- Crack egg into hot oil and let fry for 1 minute. Serve sunny-side-up, or flip the egg and let fry on the other side for another 30 seconds.
- For a more well-done and crispier egg, fry for a few seconds longer on each side.
