Fried Plantains

Cousin to the banana, plantains are typically lower in sugar and have a higher level of starch. They are a great source of potassium and fiber.

Ingredients

  • 1 large plantain, peeled and sliced ½" thick
  • ½ cup vegetable oil
  • ½ tsp. kosher salt

Directions

  • Heat oil in a wok to medium heat. Fry the plantain slices for 2 minutes on each side until they are golden brown and edges begin to caramelize.
  • Drain on plates lined with paper towels and season immediately with salt. Serve warm.
