- 3 cups cooked pinto beans
- 3 Tbsp. bacon drippings
- 1 onion, finely chopped
- ½ tsp. salt
- ⅛ tsp. cayenne pepper
- 2 Tbsp. chopped cilantro
- 1 Tbsp. chili powder
- In large saucepan, melt bacon drippings and cook onion until tender, about 10 minutes.
- Add beans, salt, cayenne, cilantro, and chili powder and cook 10 minutes, mashing beans with a potato masher or fork, until beans absorb the fat and mixture is as smooth or chunky as you like.
