Frijoles Refritas

This recipe can be expanded depending on how many people you want to feed. You can use just about any flavoring you like to season this rich and creamy side dish.

Ingredients

  • 3 cups cooked pinto beans
  • 3 Tbsp. bacon drippings
  • 1 onion, finely chopped
  • ½ tsp. salt
  • ⅛ tsp. cayenne pepper
  • 2 Tbsp. chopped cilantro
  • 1 Tbsp. chili powder

Directions

  • In large saucepan, melt bacon drippings and cook onion until tender, about 10 minutes.
  • Add beans, salt, cayenne, cilantro, and chili powder and cook 10 minutes, mashing beans with a potato masher or fork, until beans absorb the fat and mixture is as smooth or chunky as you like.
