Garden Fresh Carrot Pickles
Enjoy the bounty of the farmer’s market...right in your refrigerator! Give this recipe a try and see if it doesn’t have you sneaking veggies out of the refrigerator all the time. These treats are tasty right out of the jar or served alongside your favorite Korean dishes.

- ¾ cup white vinegar
- 1 cup water
- 2 cloves garlic, chopped
- 1 tsp. pickling spice
- 2 tsp. kosher salt
- 2 tsp. honey
- 1 lb. baby carrots
- Combine all ingredients together in a large pot. Cook over medium heat just until boiling.
- Transfer to a 1-quart mason jar. Place lid on jar. Refrigerate overnight. Enjoy within 6 weeks.
