Garlic Lime Marinated Tri-Tip Roast

Tri-tip is delicious sliced in fajitas, atop a salad, or with your favorite side dish!
Ingredients
- 1 beef tri-tip roast, 1 1/2-2 pounds
- 1⁄3 cup olive oil
- 4 each garlic cloves, minced
- juice of one lime, and zest
- 1 tablespoon fresh rosemary, finely chopped
- freshly ground black pepper
- sea salt
Directions
- Combine oil, garlic, rosemary, salt and pepper and lime juice in a large resealable plastic bag. Add tri tip and coat the meat with the marinade. Refrigerate for six hours to overnight.
- Heat grill to 500ºF. Sear the tri tip for about four minutes on both sides.
- Lower temperature to 400ºF. Close the grill, and cook until tri tip reaches an internal temperature of 130°F (for medium rare) on an instant-read thermometer, about 10 minutes.
- Transfer the meat to a cutting board, tent loosely with foil, and let rest for 10 minutes. Slice against the grain and serve.
