Gâteau au Yaourt (Yogurt Cake)

Yogurt Cake is a very easy recipe that French kids learn to bake early: They use a yogurt container as a scale to determine the amount of the other ingredients. It's very easy, with a very smooth texture.

  • 2⁄3 cup yogurt, plain
  • 3 eggs
  • 1 2⁄3 cups all-purpose flour
  • 2⁄3 cup plus 1 Tbsp. sugar, divided
  • 1⁄3 cup sunflower oil
  • 1⁄4 tsp. salt
  • 2 Tbsp. baking powder
  • 1 organic lemon
  • 1 Tbsp. butter


  • Preheat the oven to 400°F.
  • In a large bowl, combine the yogurt and the eggs, and beat firmly with a wooden spatula. Add the flour, 2⁄3 cup sugar, the oil, the salt, and the baking powder, and beat again until combined. Using a box grater, grate the peel of the lemon over the bowl, and stir it into the mixture.
  • Butter an 8-inch round baking dish, pour one tablespoon sugar in it, and shake the dish so that the sugar gets everywhere in the dish. Pour the mixture in the dish and bake for 25 minutes. The cake is cooked when a knife blade put in the center comes back out clean.
  • Serve lukewarm or cold.
