Giant Oatmeal Chocolate Chunk Cookies

This recipe makes 6 big cookies, but can easily be made into smaller cookies by forming the dough into smaller balls and baking for only 12 minutes.

  • 1⁄2 lb. unsalted butter
  • 3⁄4 cup granulated sugar
  • 1 cup light brown sugar
  • 1⁄2 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 3 cups all-purpose flour
  • 1⁄2 tsp. salt
  • 1 tsp. baking soda
  • 6 oz. chocolate chunks


  • Preheat oven to 325°F. Line a baking sheet with parchment paper.
  • Mix together the butter, both sugars, and vanilla until smooth. Slowly add the egg and egg yolk and mix well. In a separate bowl, mix together the flour, salt, and baking soda. Mix this into the sugar mixture. Fold in the chocolate.
  • Form the dough into 6 large balls. Place balls on prepared baking sheet. Bake for 20 minutes or until lightly browned all over. Remove from oven and let cool.
