Ginger Cake
If you love gingerbread, this cake is for you. It is moist and full of ginger flavor.

Ingredients
- 1 cup butter, softened
- 1 cup brown sugar
- 3⁄4 cup light molasses
- 2 1⁄2 cups all-purpose flour
- 2 tsp. baking soda
- 1 Tbsp. ground ginger
- 2 tsp. fresh grated ginger
- 1 tsp. cinnamon
- 1⁄2 tsp. allspice
- 1⁄4 tsp. salt
- 1 1⁄4 cups buttermilk
- 4 large eggs
- 2 tsp. vanilla extract
- 1⁄8 cup confectioners’ sugar
Directions
- Preheat oven to 325°F. Spray a 9-by-13-inch baking pan with nonstick baking spray containing flour and set aside.
- In large bowl, combine butter with brown sugar; beat until light. Stir in molasses. In medium bowl, combine flour, baking soda, ginger, cinnamon, allspice, and salt. Add alternately with buttermilk to butter mixture.
- Beat in the eggs, one at a time, beating until thoroughly incorporated. Then beat in vanilla. Pour into prepared pan. Bake for 1 hour or until toothpick inserted in center comes out clean. Cool completely on wire rack, then sprinkle with confectioners’ sugar.
