Ginger Turmeric Potato Salad

This recipe combines all the flavors that you love from traditional potato salad, with all the added health benefits of ginger and turmeric.

  • 4½ quarts water
  • 1 tsp. salt
  • 1 Tbsp. olive oil
  • 3 cups diced red potatoes
  • 2 medium stalks celery, diced
  • 2 scallions, chopped
  • 2 Tbsp. chopped fresh dill
  • 2 Tbsp. chopped fresh parsley
  • ½ cup mayonnaise
  • 1 tsp. ground ginger
  • 1 tsp. ground turmeric
  • 1 tsp. salt
  • 1 tsp. freshly ground black pepper


  • Bring the water to a boil in a large pot over medium heat. Add the salt, oil, and potatoes. Cook for 20–25 minutes or until the potatoes are cooked to the desired doneness.
  • Remove the potatoes from the heat, drain, spread on a baking sheet, and let cool to room temperature.
  • In a large salad bowl, combine the potatoes, celery, scallions, dill, and parsley. Add the mayonnaise and stir to combine.
  • Add the ginger, turmeric, salt, and pepper. Stir again to combine all ingredients.
